Season shrimp with 2 tablespoons of Mild meat Seasoning
Saute the chopped onions ,bell pepper, and shrimp in a lightly oiled skillet.
Place in a bowl, along with avocado, tomato, and the remaining of chopped onion,bell peppers, add 1 tablespoon of lime juice. Mix well and chill in the fridge.
Peel and slice each plantain into 3-inch chunks. Fry in 350 F
oil until slightly golden, but not browned, for about 4-5 minutes. ( Make sure
to not under-cook or the plantain will fall apart when you press them in the
lemon squeezer).
Drain the plantain Cups on a paper towel. To prevent sticking rub some oil in
the lemon squeezer. Place the plantain chumps into the lemon squeezer and press
all the way to form a cup.
Gently removed from the lemon squeezerIn a bowl, add 1 cup of warm water. Squeeze 1/4 of the lime
in the water and ½ teaspoon of salt. Steer until salt fully dissolved.Raised the heat up to 375 degrees F.
Lightly soaked up the plantain in the warm water, shake off
the excess water.
Fry the plantain pieces for 5 to 6 minutes until golden , and crispy.
Remove the plantains and drain the excess oil on a paper towel
Immediately fill the cups with the shrimp mixture and serve.
