Rinse quinoa in a fine-mesh sieve with cold water until water runs clear.
Heat 3tbs of olive oil in a large pot over medium heat.
Add 2 tbs of Le Bon Gout green seasoning, stir until caramelized. Do not overcook.
Add 1 cup of mix vegetable, 1 habanero pepper (optional) ¼ tsp of salt Add 2 cup of water, bring to a boil
Add the quinoa to the boiling mixture, reduce heat to low and simmer until quinoa is cooked and liquid is absorbed about 20 to 25 minutes. You do not need to stir the quinoa as it is cooking
After 25 minutes, removed the lid and stir with a fork or wooden spoon.
Turn off heat and allow to sit covered for 5 minutes, until the remaining water is absorbed.
Remove the lid and gently fluff the quinoa.
Leave the quinoa on the stove with the cover on.
