Black Mushroom Rice Recipe

Black Mushroom Rice (Diri ak djon djon)

Ingredients

  • 2 Cups of Dried Black Mushrooms (djon djon)
  • Le Bon Gout green Seasoning
  • 2 tablespoons olive oil
  • 2 cups long-grain rice
  • 12-ounces       lima beans or green peas
  • 1 green Scotch bonnet pepper
  • 1 cube chicken or beef stock
  • ½ cup of coconut milk
  • Instructions

Step 1

In small pot, soak mushrooms in 4 cups water for 15 minutes.

Step 2

Boil mushrooms on low heat for 15 minutes.

Step 3

Strain the mushroom water into another container for later use. (The mushrooms in the strainer can be discarde)

Step 4

In a large pot, (on medium high) add 2 tablespoons of olive oil, 3 tablespoons of Le Bon Gout green seasoning. Add the Lima beans. Simmer for about 5 minutes.

Step 5

Over high heat, add the coconut milk and the mushroom water

Step 6

Next, add 1 cube chicken or beef stock (or ½ teaspoon of salt if you are vegetarian) and 1 green Scotch bonnet pepper

Step 7

Bring the water to a boil, reduce the heat and add the rice

Step 8

Stir occasionally until water has evaporated.

Once liquid has evaporated, lower your heat and cover rice to allow it to fluff up.

Step 9

Cover over low heat for 30 mins.

Step 10

Let it sit for 10 minutes then serve
