The history of Haitian seasoning “epis” can be traced back to the African slave trade, as enslaved Africans brought their culinary traditions and seasonings to the Caribbean. Though the origin of Haitian epis is not entirely clear, it is believed to have been influenced by the culinary traditions of West Africa and France. When the French colonized Haiti in the 17th and 18th centuries, they brought many of their culinary traditions and ingredients, which were then blended with the local African and indigenous cuisines, which have evolved into their unique blend of herbs and spices commonly used in Haitian cooking today. Though The recipe for Haitian epis can vary depending on the region and the cook, the common ingredients include garlic, onion, thyme, parsley, scallions, cloves, and bell peppers.
