Haitian Spaghetti with Hot-dogs, and smoked Herrings

Ingredients

1lb of spaghetti

3 tbsp. olive oil

3 tbsp. tomato paste

1 ½ cups diced white onions

1 ½ cups diced bell pepper

1 scotch bonnet (optional)

1 teaspoon Thyme (fresh, leaves or dried)

1 cube Maggi chicken bouillon or 1 1/2 tablespoon Chicken Bouillon Powder

8 hotdogs cubed or sliced (Hotdogs can be chicken, pork, turkey or beef)

1 smoked Herring fish

½ tbsp of Le Bon Gout Meat seasoning

4 cups of water

1 tsp of salt

1 green onion chopped (optional)

1 tablespoon Garlic (chopped)

Directions

  1. In a large pot bring 4 cups of water, 1 tbsp. Of olive oil, and 1 tsp of salt on to boil.
  2. Add the smoked Herring fish in the boiling water to soften (this method will also minimize the heavy salt content in the smoked fish)
  3. After the spaghetti is cooked, Drain and set aside.
  4. Rinse the smoked Herring in cold water, remove the bones, and chopped into small pieces
  5. In the large pot add 2 tbsp. of olive oil and sauté the hotdogs and smokes Herrings for 2-3 min.
  6. Add the tomato paste, peppers, thyme, chopped green onion, ½ tbsp Le Bon Gout Meat seasoning,1 Chicken bouillon Cube or powder, scotch bonnet pepper, onions, garlic; Cook for an additional 3 – 4 minutes while stirring occasionally.
  7. Add ½ cup of water and bring to boil 
  8. Add the cooked spaghetti and mix thoroughly.
  9. Reduce the heat and let simmer for 4 min and serve.
